Pumpkin Pie Mousse Bites

Fall is officially here, and that only can mean one thing…pumpkin! We are providing a twist on tradition by recreating the most iconic pumpkin treat - pumpkin pie. These mini bites seriously melt in your mouth!

Ingredients:

  • 1 box (15 shells each) frozen Mini Fillo Shells, thawed

  • 2/3 cup pure pureed pumpkin

  • 1 cup fresh homemade whipped cream (half to fold into mixture and the other half to use as topping)

    • 2/3 cup cold heavy cream or heavy whipping cream

    • 1 Tablespoon confectioners’ sugar or granulated sugar

    • 1/2 teaspoon pure vanilla extract

  • 2 Tablespoons brown sugar

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon clove

  • Dash of allspice

  • 1/3 cup toasted pecans chopped

Directions:

  1. In a medium mixing bowl, beat the pureed pumpkin with an electric mixer

  2. Add in brown sugar and spices, mix well

  3. Bake filo cups as instructed on box

  4. In a new bowl, begin making the homemade whipped cream. Whip 1 cup heavy cream until soft peaks form. Add in vanilla and powdered sugar. Beat again until medium peaks form. Divide the mixture in half. In one half, fold in 2 tablespoons maple syrup to be used as topping. Use a rubber spatula to fold in the other half of the whipped topping into the pumpkin puree mixture.

  5. Spoon 2 teaspoons of the pumpkin mixture into the filo cups and add a teaspoon of additional whipped maple topping. Once ready to serve, top with pecans. Enjoy!
